Forest honey is a blend of miscellaneous types of honeydews with the richest mineral content of all honeys. It tends to crystallize medium slowly. The colour of forest honey ranges from pale to dark brown with red or olive green nuances. It has a delicious, sweet, balanced flavour with a slightly bitter aftertaste and a smell that reminds you of resin, spruce tips, dairy bonbons, and gingerbread biscuits.
