Due to its high pollen content, chestnut honey has a wonderful sweet flavour and a slightly bitter aftertaste. You will recognize it by its brownish red colour and a distinctive smell of absinthe, chestnut flowers, and wrinkled walnut leaves. It is noted for having the highest levels of natural antibiotics (hydrogen peroxide) of all honeys. It crystallizes slowly.
Chestnut honey is great to use when baking sweets, for example, gingerbread biscuits or cakes, or for sweetening herbal teas. Before adding honey let your tea cool down to 35° C to preserve all the health benefits of honey.
